Eat Drink RI Preview

For those of you that aren’t native to Rhode Island, Eat Drink RI is a festival held each year that showcases the best of the culinary world that Rhode Island has to offer – I like to refer to it as a “Locavore’s Heaven.”

Locavore Definition Our crew at Easy Entertaining takes great pride in being a part of this festival each year. This year, there is a festival event called “The Rhode Island Chef’s Feast” in which eight Johnson & Wales culinary graduates are each paired with a Johnson & Wales Chef to create a dish for a multi course meal. Chef Ashley was paired with Chef Valeria Molinelli, and this morning they started testing some potential dishes for the dinner.

Both Chefs wanted to do a pasta dish – so they tested out some potential gnocchi options. Check out their dishes below!

Beet Gnocchi

This dish was composed of house made beet gnocchi with Schartner Farms beets, maitake mushrooms from the Rhode Island Mushroom Company, pea greens, and Narragansett Creamery ricotta cheese.

Beet and Sweet Potato Gnocchi

Their second dish was a combination of house made beed and sweet potato gnocchi – also served with Rhode Island Mushroom Company‘s maitake mushrooms, pea greens, and Narragansett Creamery ricotta. As a garnish, they utilized crispy kale from Schartner Farms.
